Beginning this spring, Merzbacher’s will continue Metropolitan Bakery’s wholesale bread operations
For more than 30 years, Wendy Born and James Barrett built Metropolitan into one of Philadelphia’s most trusted wholesale bakeries, supplying restaurants, cafes, and markets across the region. Rather than see that work come to an end, they chose a path that allows the bread, the relationships, and much of the production team to continue.
Merzbacher’s has spent the past 13 years baking wholesale bread for kitchens throughout the city. Our immediate focus is simple: keep things steady. Recipes, production methods, and delivery rhythms will remain familiar as we learn from Metropolitan’s bakers and longtime customers. Metropolitan set a high standard for bread in Philadelphia, and being trusted to carry that forward is something we take seriously.
